☑️ The first thing you need to know is the composition of the milk you drink every day. Its main components are water, fats, protein, sugar (carbohydrates), vitamins, minerals and salts.
☑️ Second, you need to understand how these components interact with each other and what they are responsible for in the taste and texture of the drink. Different milk contains a different amount of constituent components.

It is important to remember that not every coffee is revealed well in milk!
Acidity in it should be lowered or balanced!

✅ DAIRY FAT
The first thing we pay attention to when it comes to milk is the percentage of fat in it.

❗️For the preparation of coffee, milk from 3 to 4% fat will be ideal.

Milk fat in the drink is able to emphasize both refined tastes and slightly muffle too bright.
So, for example, bright cherry flavor notes become more muffled in the presence of fat. But vanilla flavor can develop milk fat to such an extent that you will only feel this descriptor in coffee.

✅ PROTEIN - SOURCE OF FOAM ELASTICITY
When whipping, the foam becomes glossy, and does not break up instantly, as, for example, ordinary bath foam!
Proteins help milk become more elastic, and this component gives even more gloss to the foam.

❗️The normal protein content is 3.6-4.1%.

Therefore, pay attention to what the milk producer writes on the back of the bag.

✅ LACTOSE
Where does sweetness without sweeteners appear in milk?

Lactose is a disaccharide (“two sugars”) consisting of galactose and glucose.
Although lactose is defined as sugar, it only has 16 units out of 100 in terms of sweetness compared to regular sugar (sucrose)!
The more lactose in milk - the sweeter it will be, regardless of the heating temperature!

❗️The normal lactose content in milk is 4-5%.

Milk with a low lactose content (less than 3%) will not have that soft sweetness.
And warm milk seems sweeter only because the human tongue, in principle, perceives sweetness better in its warm form.

? WHAT MILK WE RECOMMEND?

? Milk with an acceptable taste, in which there is a natural sweetness.
? Milk that is quality processed. We can judge this by the absence of the characteristic “cow” flavor, which is often repulsive in milk.
? Milk from 3 to 4% fat.
